a house of
sensory craft

One luxury food-and-drink destination with two houses: a rare, experimental vintage collection and a made-to-order soft-cheese atelier. We make fewer things, with more consideration.

wine · experimental vintages · the ageing atelier

A study of flavour, provenance and time.

We create experimental vintages through proprietary blending, working with ethically sourced agricultural ingredients selected for their regional character. Every expression begins with a flavour idea, developed through the judgement of our makers and the character of the ingredients available to them.

Our ingredients come from ethical farmers, chosen with local produce and regional flavour in mind, then sorted and hand-picked by our makers. Listed flavour profiles describe the intended sensory direction of each vintage, not a fixed ingredient declaration.

Created in 2027. Released in 2030.Our founding experimental collection is developed across time. We do not treat time as a marketing device: each expression must meet the house’s production, stability and quality standards before release. Each collection is accompanied by an original documentary, published at launch.

The Founding Vintages

Each expression is an individual study in flavour. The names identify the work; the profiles describe its creative direction.

The Seasoned Collection

Experimental expressions that move beyond familiar fruit-led profiles, exploring savoury, botanical, earthy and umami-led directions.

The stated profiles are creative descriptions, not definitive ingredient declarations or guarantees of the final liquid’s exact sensory characteristics. Final compositions, legal product classifications and permitted descriptions are confirmed for each release.

the ageing atelier

time, studied.

Our Ageing Atelier investigates how a vintage develops through its production method, environment, vessel and maturation conditions. The ageing dome is our dedicated experimental environment for controlled trials, observation and comparative evaluation, each documented to understand what changes, what remains stable and what merits further development.

We look beyond conventional maturation: the relationship between liquid and vessel, the material character of a bottle, the influence of closures and the conditions under which an expression evolves. The result is a living record of the work behind each release.

The bottle as an object

Each vintage receives its own design language, informed by its intended flavour profile. Form, material, closure and presentation are considered as part of the complete work: distinctive in its own right, yet appropriate to the liquid it contains.

the cellar & display atelier

a home for the collection.

We design bespoke wine cellars, collector cabinets and display environments for private collections, residences and hospitality spaces. Every installation begins with the collection itself: its scale, storage requirements, display preferences and the architecture around it.

Collector Cabinets
from £15,000 per unit
Bespoke display cabinets for considered collections, with options for specialised storage, integrated lighting, materials and finishes.
The Atelier
bespoke
Custom-designed cabinetry and collection environments, developed around the owner’s space and individual requirements.
The Estate
integrated projects
Integrated cellar and display projects for larger residences, hospitality environments and private collections.

All storage systems are specified according to the products they are intended to hold. Display lighting, temperature control, humidity and other environmental requirements are part of the design.

the documentary

every vintage has a history.

At the launch of each collection, we publish a documentary exploring its flavour profiles, sourcing choices, agricultural origins, makers and development. It is our record of the year’s work: how the original ideas were interpreted, how ingredients were selected and how the final expressions took shape.

Provenance deserves to be documented, not merely asserted.

the cheesehouse

soft cheese · regional milk · made to order

Soft cheese, considered from the milk outward.

The Cheesehouse works exclusively with soft-cheese formats, bringing together carefully selected milk sources, distinct flavour profiles and individual approaches to texture, ripening and presentation. Milk comes from selected producers across different regions, blended according to the character sought in each expression.

50 wheels per month, per cheese type.250 g per wheel · £25 per wheel. Each cheese is made to order. Orders must be placed one month in advance, subject to the monthly allocation and production availability.

the cheese collection

Choose a delivery month (orders open two months ahead) and, where you wish, a consistency. 50 wheels per cheese type each month. Add any ingredient requests in your order notes at checkout; we confirm combinations before production.

The Original Wheels

Three familiar forms (Brie, Camembert and Burrata), each developed through different milk blends, flavour profiles, textures and finishing methods.

The Washed Collection

Tofu wine-washed expressions, developed around a tofu-inspired flavour direction and a wine-washing treatment.

Wine-washed descriptions refer to the intended production treatment. The actual wine, process, residual alcohol status and allergen information are confirmed for each product.

The Layered Collection

A different construction. Thin rounds are arranged in layers so the rind becomes part of the eating experience rather than staying on the outside of a single wheel, giving a distinctive cross-section with repeated transitions between rind and paste.

Layered versions add Layered before the cheese name: Layered Brosh, Layered Camsh, Layered Burrat (where suitable for the fresh-cheese format), Layered LeBrosh and Layered LeCamsh. £25 · 250 g per wheel, subject to confirmation of format, successful production trials, food-safety validation and availability.

consistency & maturation

Choose the intended consistency and maturation direction when ordering, wherever available for the selected cheese.

Not every profile is suitable for every cheese type. Available combinations are confirmed in the product selection before an order is accepted.

Milk, rennet & ingredient notes

Different milk blends are selected for different flavour profiles, considering regional character and suitability for cheesemaking. We use either traditional or vegetarian rennet, and the applicable type is confirmed for the selected product.

To exclude an ingredient, specify it in the notes at checkout. We will review the request and confirm whether it can be accommodated before production. A request to exclude an ingredient is not a guarantee of an allergen-free product; our team will confirm ingredient and cross-contact information where available.

our standard

craft is not a claim. it is a process.

Every house within Nrutseab has its own discipline. The Vintage House studies flavour, time and provenance. The Cheesehouse studies milk, texture, rind and maturation. We develop original products, document the work behind them and release them only when they meet the relevant quality and safety requirements.

The details matter: the origin of an ingredient, the construction of a wheel, the behaviour of a liquid and the environment in which a collection is kept.

We make fewer things, with more consideration.
